The 2011 Omelette

Happy New Year! Today is January 2, 2011 and we're having omelettes. Eric the Magician and Ann visited us for my Mom and Dad's New Year's party on Friday night. They love my omelettes.

This omelette had a lot of good ingredients in it. Parmesan cheese, asparagus, and black-bean-and-corn salsa. Like usual, we just use up what we have in our fridge.

Ollie's always getting into my eggs.

Me with a fork. I'm mixing eggs.

We made potato pancakes with leftover mashed potatoes from dinner last night. The other stuff
in this picture was for the omelettes. Parmesan cheese, asparagus, and salsa.

I want my omelettes to be round but they're usually bumpy like this.

That's sour cream and applesauce on the potato pancake.

Eric is a big fan of my breakfast. He's saying, "This is really good, Merrit!"

Jolly Good Omelette

My dad is in England and we decided to make an English omelette. So my mom and I looked on the computer to see what an English omelette has in it.

This is what an English omelette has in it: Green onions (we did not have these, so we used garlic chives from the garden), mushrooms (we sauteed our mushrooms because Gramma B wanted to), asparagus (we only had canned asparagus, but it was still good), green peas (we meant to put these in but we forgot).

Gramma B taught me how to crack an egg with a knife instead of on a table or counter. I got good at it, and so I used it a lot. Gramma B named the omelette because Daddy wasn't here to name it. She called it the Jolly Good Omelette.

Cutting garlic chives and mushrooms.

Gramma B showed me how to scoop out the
insides of the egg shells to get the rest of
the egg white out of the shell. That's the way
her mother did it.

This omelette is just about ready to be folded in half.

My brother cramming toast in his mouth.

Gramma B's plate. And her cup of tea.
