The 2011 Omelette

Happy New Year! Today is January 2, 2011 and we're having omelettes. Eric the Magician and Ann visited us for my Mom and Dad's New Year's party on Friday night. They love my omelettes.

This omelette had a lot of good ingredients in it. Parmesan cheese, asparagus, and black-bean-and-corn salsa. Like usual, we just use up what we have in our fridge.

We made potato pancakes with leftover mashed potatoes from dinner last night. The other stuff
in this picture was for the omelettes. Parmesan cheese, asparagus, and salsa.

I want my omelettes to be round but they're usually bumpy like this.

Eric is a big fan of my breakfast. He's saying, "This is really good, Merrit!"

The Thanksgiving Omelette

Dad said, "I'm calling this the Thanksgiving Omelette. That way, I only have to eat it once a year."

I made this omelette with turkey, stuffing, and Parmesan cheese. And on the side, we had cranberry sauce. On top of the omelette, there was dill. [Mom's note: The stuffing is our favorite Thanksgiving stuffing; it has cornbread, shrimp, green chiles, carrots, celery, onions, and cilantro in it.]

The "Bologna Me Away" Omelette

Every Sunday, I make omelettes. Today what we put in the omelettes was sliced leftover turkey meatballs, oregano, and Parmesan cheese. Dad called the omelette "The Bologna Me Away" because it had all those Italian ingredients. He said it was good but that it needed some tomatoes or tomato sauce. Or even salsa.

I'm picking the oregano.
